KetoRunningMama's "Eat Your Veggies!" Low-Carb, Keto Chili
If you have children, you know the "EAT YOUR VEGGIES! battle" well. Even before I started living a ketogenic lifestyle, I loved to cook. I enjoy planning for food...looking at pictures of food, writing a menu, shopping for food...I thought I would love feeding my children food. I. Do. Not.
I used to live the typical American lifestyle. I did not think about whether or not I got in all of my vegetables for the day. It simply was not a worry of mine. I stupidly thought I was healthy...and that was that. Then I was diagnosed with Multiple Sclerosis. I could not believe that this was a genetic problem that I had. No one in my family had it. I turned to my lifestyle.
First I went Gluten-free. That helped a lot. Then I went "clean." That helped even more. Then I did an elimination diet. I still had more improvements in my health. Then I went grain-free and dairy-free. I felt even better. Fast forward to now, and I am grain-free, gluten-free, dairy-free, sugar-free, low-carb, ketogenic....and I feel like a normal person who does not suffer from MS. Part of my health journey has been a huge focus on vegetables, no matter what lifestyle I was leading at the time. I eat as many veggies as I can in a day. ....And I have children who, literally, turn their noses up to every vegetable that I offer.
At first, I felt panicky about it. How could I be leading this incredibly healthy lifestyle...and my kids eat crap? Will they get sick like I did? Is this the legacy that I will pass on to them? Now, this is still (and may always be) a struggle in my house, but I have to say that, when my thinking and behavior changed about what I put into my mouth, my kids thinking and behavior about what they put into their mouths changed. That being said, it is still a struggle to get them to eat all of the vegetables that I think they should eat in order to remain healthy.
Then a friend introduced me to Juice Plus. She has fibromyalgia and started taking Juice Plus to see if it would help her. She jokes that she "used" to have fibromyalgia...because her symptoms are gone. I, personally, do not take Juice Plus. I already take a ton of supplements that my Doctor of Functional Medicine has recommended due to testing that I have had. And, I eat so many vegetables that I did not feel that it was necessary. For my kids, however, this has been the perfect solution. They take these juiced vegetables and fruits in the form of gummies every day...and I can relax a bit, knowing that I am not ignoring their health and nutrition.

Mama's "Eat Your Veggie!" Low-carb, Keto Chili
Ingredients:
1 pound Ground Beef
1 pound Ground Sausage
1 pound Bacon (for topping)
2 Zucchini, finely diced
6 cloves Garlic, minced
2 Red Onions, finely diced
2 Peppers (One Red, One Yellow or Orange), finely diced
1 Jalepeno, finely diced (deseeded if your kids won't eat it if it is too spicy)
1 Avocado (for topping), sliced
8 Tomatoes (Or 2 large cans of canned tomatoes if you prefer), diced
4 cans Tomato Paste
2 Tablespoons Bacon Grease
Spices:
2 tsp. Chili Powder
1 tsp. Red Pepper
1 tsp. Garlic Powder
1 tsp. Onion Powder
1/2 tsp. Paprika
Salt to taste
Pepper to taste
Directions:
1) Preheat your oven to 350 degrees.
2) Bake bacon in oven for 20-25 minutes, until browned and crispy. Break into little bacon crumbles for the top of your chili. Reserve the remaining bacon grease to add to your chili.
3) While your bacon is baking, put all vegetables into a food processor except for the tomatoes. Pulse until the vegetables are the size that you like and that your kids will eat. (My kids love this chili....but I have to disguise the fact that they are eating A LOT of vegetables.)
4) Heat the bacon grease in a large soup pot. Once heated, add the Ground Beef, Ground Pork Sausage, and chopped vegetables. Cook until the meat is cooked through and browned and the vegetables are softened.
5) As the meat and vegetables are cooking, dice the tomatoes.
6) Once the meat is cooked through, add the diced tomatoes, tomato paste, and bacon grease from your bacon to the pot. (add however Stir until well-blended.
7) Mix all spices together in a small dish. Adjust measurements to your liking depending on how spicy you like your chili to be.
8) Add the spices to the chili. Blend well.
9) Let simmer for 20-25 minutes.
10) Top with bacon crumbles and avocado slices.
My kids eat this chili...and they love it. Day by day, my family will eat better and better. This is a lifetime commitment to our bodies, our health, and our well-being. As we learn and fight and grow together, I will rest assured that they are getting the nutrients they need through Juice Plus.
A year ago, when they started on this supplement, I was asked if I would like to sell it to try to make my money back on what I was spending on my children.
